S2E8: Christmas Cookies

This episode has hygge updates, various recording hiccups, Gilmour visits and more! Sara had a hygge day and a scary drive in the snow, while Laura is hooked on Orange Theory and is about to boycott her local Starbucks. The main topic is Christmas cookies, so the gals chat about all of their favorites and family traditions, plus Sara has a personal favorite for Laura to try.

sara’s oatmeal toffee cookies:

• adapted from the Oatmeal Scotchies recipe from Cookie Love

• Swap butterscotch chips with toffee bits.
• Use a medium cookie scoop (1.5 tbsp) and do 6 cookies per baking sheet.
• Do first pan-bang and rotate at 6 minutes.
• Bake for another 1.5-2 minutes, pan-bang one more time and take them out.
• Cookies are done when there’s a ring around the edges that is baked through and the centers still look undone.
• Allow them to cool completely on the pan before moving to a wire rack.
• They freeze very well and are great eaten straight out of the freezer.
